Delicious Cold Salads to Enjoy During Summer

Tuna Salad

This salad is high-protein but also super tasty! It's perfectly put together in 15 mins. and has extra tastiness with added potatoes and carrots, a different take on the traditioal recipe.

Ingredients (for 4 people):

  • 2 hard-boiled eggs
  • 1 handful of green olives
  • 4 medium potatoes
  • 1 can of tuna
  • 1 small jar of corn
  • 1/2 can white asparagus
  • 1/2 can red peppers
  • 1 cup mayonnaise
  • Salt and pepper (for seasoning)

Instructions:

  1. Peel the potatoes, cut into cubes, and cook in boiling water for 20 mins. until soft. Strain and let cool.
  2. In a salad bowl, mix the tuna with the corn, diced asparagus and mayonnaise. Mix well.
    Add the potatoes, season with salt and pepper and mix again.
  3. Arrange the salad on a plate and decorate with the bell pepper strips, olives and sliced hard-boiled eggs.
  4. Enjoy!

  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
