Hummus

Dried beans are cheap and easy to use, but it takes at least an hour to cook chickpeas, using the boiling water method. Fortunately, pressure cookers knock that time down to about 40 minutes (as long as you remember to soak the chickpeas the night before!). To make a quick and easy hummus, simply blend the cooked beans with tahini sauce, cumin, garlic, lemon juice and salt.
