Raspberries are one of the best things about summer, and so are mojitos — so why not combine the two? This drink also works well with other berries, but the combination of sour lime and sweet raspberry really is special.
Ingredients (for 1 beverage)
1/2 cup fresh mint leaves
1/2 cup raspberries (plus more for garnish)
2 oz. white rum
1 oz. fresh lime juice (save a wedge for garnish)
1 oz. simple syrup
4 oz. seltzer water
Ice cubes
Instructions
In a cocktail shaker, muddle the raspberries and mint leaves before adding the rum, lime juice and simple syrup. Fill the rest of the cocktail shaker with the ice cubes and shake until cold.
Place more ice cubes into a glass, and pour the liquid over a strainer and into the glass. Garnish with additional raspberries and a wedge of lime.
