Everything You Need to Know About Foraging Mushrooms

Easy Black Trumpet Souffle

Ingredients (for 4 people):

  • 1/4 cup butter
  • 4 oz. crimini mushrooms
  • 1/2 cup flour
  • 1 1/4 cups milk
  • 3/4 cup Swiss cheese
  • 3 eggs
  • Salt and pepper

Instructions

  1. Sauté mushrooms in butter 5 minutes on medium-low heat. Add the flour and stir for 2 minutes.
  2. Turn down the heat before slowly stir in the milk.
  3. Turn the heat up again, and add the cheese, salt, and pepper.
  4. Seperate the egg whites from the egg yolks, and beat in the yolks only.
  5. In a seperate bowl, whisk the egg whites until they're stiff. 
  6. Fold in the mushrooms and pour into a souffle dish.
  7. Bake for 35 minutes until firm.
  8. Serve immediately.
