This is how you conjure up an irresistibly delicious omelette with chanterelles.
Ingredients (for 1 person):
1 1/2 cup fresh chanterelles
4 organic eggs
2 scallions (chopped)
1 handful of parsley (chopped)
Salt and pepper (to season)
Instructions:
Brush or wash the chanterelles.
Heat some vegetable oil (e.g. sunflower or rapeseed oil) in a pan over medium heat. Sauté the chopped spring onions briefly, then add the chanterelles and sauté for a few minutes. Crack the eggs into a bowl, whisk briefly with a fork and season with salt, pepper and parsley.
Reserve a little parsley for serving. Pour the egg mixture over the fried chanterelles in the pan and spread evenly.
Let set over low heat until only the surface is slightly gooey. Then, using a spatula, fold the omelette in half to create a semi-circular pocket. Fry them briefly on both sides and then remove from the stove.
The chanterelle omelette is ready. We think it tastes great with a chunk of whole wheat bread.
