Baked Apple Jam

If you have an apple tree in your garden, it's likely you'll have a few too many apples hanging around toward the end of September and into early October. If you leave them in the garden to rot once they've fallen, they'll attract all sorts of rodents and nasties, so why not make some jam? After all, an apple a day keeps the doctor away!

Ingredients (for 4 jars): 

  • 3 lbs. apples 
  • 2 cups apple cider
  • 2 cinnamon sticks
  • 1 tbsp apple cider vinegar
  • 1/4 cup honey
  • 1 tsp ground cinnamon

Instructions: 

  1. Peel the apples and slice thinly.
  2. In a saucepan, bring the apple cider, cinnamon sticks, and apple cider vinegar to a boil and reduce to half. 
  3. In a skillet or dutch oven big enough to hold the apples, heat the honey on low until it begins to foam and has changed to a very light brown colour - this should take 5 min.
  4. Add the cinnamon and the apples to the pan, stir to combine and raise the heat to about medium-low. Cook the apples, stirring occasionally until they have softened. 
  5. Remove the cinnamon sticks from the reduced cider, and add the cider to the softened apples. Stir again. Simmer for 10 min. until most of the liquid has absorbed.
  6. Remove the pan from the heat and purée if desired. 
  7. Place the jam into jars.
