Fresh Fig Jam

Figs are in season from late August through to October. They're tasty and tangy, and this jam is a reat addition to a cheese platter - or ever a grilled cheese! 

Ingredients (for 6 jars):

  • 3 lbs. ripe, fresh figs (washed, quartered, stems removed
  • 2 cups sugar
  • 1 lemon (juice and finely grated zest)

Instructions:

  1. In a large saucepan, mix the figs and sugar. Let stand for 15 min. but stir ocassionally. The sugar should have dissolved and the figs should be juicy.
  2. Add the lemon juice and water, and bring to a boil. Stir until sugar has completely dissolved.
  3. Over moderate heat, simmer the jam. Stir occasionally until the fruit is soft and the liquid is thick. This should take 20 min.
  4. Spoon the jam into jars.
