Junior Mints

Junior Mints were introduced to the candy market in 1949 in Cambridge, Massachusetts by the James O. Welch Company. The name grew out of a pun on a play based on Sally Benson's Junior Miss story collection from The New Yorker.

The name stuck with Welch, who was a spectator at the play, and he eventually used it to influence the name of his miniature chocolate-covered mint patties six years later.

Today, the brand is owned and produced by Tootsie Roll Industries, which makes more than 15 million Junior Mints every day.

This French tarte tatin is golden, caramelized apple perfection!

INGREDIENTS

  • 1 puff pastry
  • 6 apples, sliced
  • 3 oz.  chilled butter, chopped into chunks
  • 1/2 cup brown sugar

 

METHOD

  1. Roll out a puff pastry.
  2. Lay out the apple slices in a pan.
  3. Add chunks of butter on top of the apples.
  4. Sprinkle the brown sugar on top.
  5. Cook for 20 minutes in oven at 350°F, to caramelize the apples.
  6. Place puff pastry on top of the caramelized apples.
  7. Cook for 15 minutes at 350°F.
  8. Enjoy!
