Dips are great for guests, but the usual go to is hummus. If you're tired of that, why not try this delicous nutty spread made from red lentils, walnuts, and mushrooms? Serve with breadsticks.
Ingredients (for 4 people):
7 oz. cooked red lentils
3 oz. mushrooms (about 3/4 cup)
3 sun-dried tomatoes
1 cup walnuts, shelled
1/4 tsp garlic powder
1/2 tsp turmeric
2 tbsp olive oil
Salt and pepper
Fresh parsley (for garnish)
Instructions:
Toast walnuts in a dry pan for 5 min.
Clean mushrooms and cut into thin slices. Slice sundried tomatoes too.
Heat 2 tbsp. olive oil in pan and sauté mushrooms for 3 min. Add the sundried tomatoes and cook for further 2 min.
In a food processor, mix the red lentils and toasted walnuts.
Add the garlic powder, tumeric, mushrooms, sundried tomatoes, and salt and pepper, and mix until a creamy consistency is obtained. If the spread is too firm, loosen it up with 1 tbsp of water.
