British Mini Sausage Rolls

Sausage rolls are a hit across the pond, and these mini versions are perfect for games night! They're  they're bite-sized but full of flavor, but if you're feeding a veggie or vegan group, make sure to swap the pork sausages for non-meat sausages. 

Ingredients (for 20 mini sausage rolls):

  • 11 oz. pack of ready-rolled puff pastry
  • 6 thick pork sausages (or non-meat alternatives)
  • 1 egg
  • 1 tbsp mixed herbs
  • 1 tbsp Dijon mustard

Instructions:

  1. Preheat oven to 300°F.
  2. Slice pastry lengthways so that you have two long lengths. Lightly brush each length of pastry with 1/2 tbsp Dijon mustard.
  3. Remove skins from sausages and line up half of the sausages along the middle of one of the pastry strips. Repeat with the other length of pastry. 
  4. Sprinkle 1 tbsp of mixed herbs over the sausages. Crack the egg and brush the meat with eggwash before rolling up the sausgae frolls from the bottom of the strip. 
  5. Seal the sausage rolls, making sure they're properly closed by piercing them with a fork.
  6. Cut each length of sausage rolls into smaller pieces, so that bite-sized sausage rolls are achieved. 
  7. Place the mini sausage rolls on a baking tray and bake for 20 min. until the sausage rolls are golden brown.
  8. Remove from oven and allow to cool. Serve warm or cold.
