Here's What You Can Make With This Year's Pumpkins

Pumpkin and Gouda Bake
If one pumpkin-based recipe wasn't enough, here's another! Perfect for a cozy fall evening, this bake will leave you feeling full and nourished.
Ingredients:
- 1 Hokkaido pumpkin
- 2 cups young Gouda cheese (sliced)
- 1 handful of pumpkin seeds
Instructions:
- Preheat oven to 350°F.
- Halve pumpkin and remove seeds. Set seeds aside.
- Cut halved pumpkin into 1cm thick slices and place in oven for 20 min. Cut the remaining half into slices.
- Once ready, remove and mash half of the pumpkin mixture with a fork. Season with salt and pepper, and add 1 cup of cheese. Mix.
- Spread the pumpkin and goude mixture into a baking dish and layer the remaining pumpkin slices and leftover gouda on top.
- Sprinkle over the pumpkin seeds and bake for 20 min.
- Enjoy!
