Here's What You Can Make With This Year's Pumpkins

Pumpkin and Gouda Bake

If one pumpkin-based recipe wasn't enough, here's another! Perfect for a cozy fall evening, this bake will leave you feeling full and nourished.

Ingredients:

  • 1 Hokkaido pumpkin
  • 2 cups young Gouda cheese (sliced)
  • 1 handful of pumpkin seeds

Instructions:

  1. Preheat oven to 350°F.
  2. Halve pumpkin and remove seeds. Set seeds aside.
  3. Cut halved pumpkin into 1cm thick slices and place in oven for 20 min. Cut the remaining half into slices.
  4. Once ready, remove and mash half of the pumpkin mixture with a fork. Season with salt and pepper, and add 1 cup of cheese. Mix. 
  5. Spread the pumpkin and goude mixture into a baking dish and layer the remaining pumpkin slices and leftover gouda on top. 
  6. Sprinkle over the pumpkin seeds and bake for 20 min.
  7. Enjoy!
