Prepping the Wrong Way

Everyone has their preferences when it comes to fried food: some would rather use flour, while others rely on breadcrumbs to do the job, or both! Regardless which breading ingredients you use, the important common denominator is that distinctive, crispy taste. One common mistake is to add salt to the food before breading and frying. Never do this! Why? You risk removing that essential crispiness while the food is cooking, as salt draws out its water content, resulting in wet breading and oil splattering. Also be sure to thoroughly dry food with paper towels before coating in the batter, which will prevent it from having a soggy texture.
