Using the Wrong Pot

Obviously, a deep fryer works best for frying, but if you don't have one, a large heavy-bottomed pot is a worthy substitute that will distribute the heat evenly. You also need to use one with high sides to accommodate the oil depth. Skillets or low-sided pans are definite no's, as the oil will overflow, and you won't be protected from dangerous splattering.
