Eggplant Fries

This recipe uses two special tricks to ensure the deep-fried eggplant matchsticks are as crispy as possible: First, soak the eggplant pieces in cold, salted water.  Then, coat them in cornmeal just before frying. Flavored with a handful of spices and served with a refreshing yogurt dip, they're the kind of veggie fries that can easily stand up to their starchy potato cousins.
