Kentucky Beer Cheese

This rich and flavorful beer cheese recipe captures the hearty textures that the South is known for. Beer cheese is the perfect pairing for pretzels, chips, and an ice-cold beverage. Better yet, the recipe is so simple it will soon become a staple in your Derby Day repertoire! 

Ingredients (serves 8-10 people):

  • 2 cups shredded sharp cheddar cheese
  • 2 cups shredded mild cheddar cheese
  • 1 clove garlic, minced
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/2 cup beer (light lager or ale)
  • 1/4 cup mayonnaise
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • Salt and pepper, to taste
  • Chopped chives or parsley, for garnish
  • Sliced baguette, crackers, or pretzels for serving

Instructions:

  1. In a medium saucepan over low heat, combine the shredded sharp cheddar cheese, shredded mild cheddar cheese, minced garlic, onion powder, paprika, and cayenne pepper.
  2. Slowly pour in the beer, stirring constantly, until the cheese begins to melt and the mixture becomes smooth and creamy.
  3. Stir in the mayonnaise, Worcestershire sauce, and Dijon mustard until well combined. Continue cooking and stirring until the mixture is heated through and thickened to your desired consistency.
  4. Taste the beer cheese and adjust the seasoning with salt and pepper as needed.
  5. Once the beer cheese is ready, transfer it to a serving bowl.
  6. Garnish the beer cheese with chopped chives or parsley.
