Pecan Pie Tarts

This fun twist on a classic recipe is the perfect addition to any Derby Day party! Eliminate the mess without sacrificing the flavor of a traditional pecan pie with a miniature tart. The compact version of a timeless treat makes it easy to mingle at a party or send leftovers home with your guests.

Ingredients( for 12 tarts):

  • 1 package (14 oz) store-bought refrigerated pie dough or frozen mini tart shells
  • 1 cup chopped pecans
  • 1/2 cup packed brown sugar
  • 1/2 cup corn syrup
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Pinch of salt
  • Whipped cream for serving 

Instructions:

  1. Preheat your oven to 350°F (175°C). If using refrigerated pie dough, roll it out on a lightly floured surface and use a round cookie cutter or glass to cut out circles slightly larger than the indentations in a mini muffin tin. If using frozen mini tart shells, simply thaw them according to the package instructions.
  2. Press the dough circles or tart shells into the indentations of a mini muffin tin, forming small cups. If using refrigerated pie dough, you may need to re-roll the scraps to make additional cups.
  3. In a mixing bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and a pinch of salt. Stir until well combined.
  4. Spoon the pecan mixture evenly into each dough cup, filling them about 3/4 full.
  5. Bake the mini pecan tarts in the oven for 15-20 min. or until the crust is golden brown and the filling is set.
  6. Remove the mini pecan tarts from the oven and let them cool in the muffin tin for a few min. before transferring them to a wire rack to cool completely.
  7. Once cooled, carefully remove the mini pecan tarts from the muffin tin and serve them warm or at room temperature.
  8. Serve the mini pecan tarts with a dollop of whipped cream, if desired.
