Avocado and Olive Oil Oats

Topping your oatmeal with fresh avocado slices and a drizzle of olive oil not only makes your breakfast creamy and delicious but also heart-healthy with good-for-you fats to keep you satiated all morning. This recipe is perfect for warm summer days when you’re craving something refreshing yet filling! For an extra creamy texture, you can stir a small amount of the mashed avocado directly into the cooked oatmeal before serving.

Ingredients:

  • 1 cup rolled oats
  • 2 cups water or vegetable broth
  • 1 ripe avocado, sliced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • Fresh herbs of choice for garnish (such as parsley, cilantro, or chives)
  • Optional toppings: cherry tomatoes, radishes, or a poached egg

Instructions:

  1. In a medium saucepan, bring 2 cups of water or vegetable broth to a boil.
  2. Stir in the rolled oats, reduce the heat to low, and simmer for about 5-7 min. or until the oats are tender and have absorbed most of the liquid.
  3. Season with salt and black pepper to taste. Remove from heat and cover to keep warm.
  4. Divide the cooked oatmeal evenly between two bowls and top each bowl with an equal portion of the sliced avocado.
  5. Drizzle each bowl with 1 tbsp of extra virgin olive oil. Garnish with fresh herbs of your choice.
  6. For added flavor and texture, top with sliced cherry tomatoes, radishes, or a poached egg. Serve your oatmeal warm, and enjoy!
