Oat Crepes

This savory oat recipe is a twist on the classic French crepe, and it is couldn’t be more simple to make! Fill your crepes with the savory ingredients of your choice like fresh shredded cheese, diced ham, smoked salmon, or sautéed vegetables. While these crepes are the perfect vessel for your savory ingredients, we won’t judge if you opt for honey or Nutella!

Ingredients:

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • 1 tbsp olive oil or melted butter
  • 1/4 tsp salt
  • 1/2 tsp baking powder

Instructions:

  1. Place the rolled oats in a blender or food processor and blend until they form a fine flour-like consistency.
  2. In a mixing bowl, combine the oat flour, milk, eggs, olive oil or melted butter, salt, and baking powder.
  3. Whisk the ingredients together until you get a smooth batter. Let the batter rest for about 10-15 min. to allow the oats to absorb some of the liquid, which will help thicken the batter.
  4. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease it with a bit of olive oil or butter.
  5. Pour about 1/4 cup of batter into the pan and quickly swirl the pan to spread the batter evenly into a thick, round crepe.
  6. Cook for about 2-3 min. on one side, or until the edges start to lift and the bottom is golden brown.
  7. Flip the crepe and cook for another 1-2 min. on the other side until fully cooked and golden.
  8. Repeat with the remaining batter, adding a little more oil or butter to the pan as needed.
  9. Serve immediately while warm or store them in the fridge to reheat later. Enjoy!
