Watermelon salad with tomatoes and feta

Serve chopped watermelon in this deliciously refreshing salad that's also filled with a colorful variety of seasonal tomatoes. Light and flavorful, it'll keep you cool on hot summer days.

Ingredients for 4 servings

Salad:

  • 2 cups (50 g) salad greens
  • 2 cups mix of orange cherry tomatoes & grape tomatoes, halved
  • 1 1/2 cups (230 g) seedless watermelon, cut into cubes
  • 3/4 cup (85 g) feta, cubed
  • 1/2 red onion thinly sliced

Dressing:

  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Combine all the salad ingredients in a medium serving bowl.
  2. In a small bowl, whisk together the olive oil and lemon juice, then season with salt and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
