15) Turn Canned Fish into Dinner

Canned fish, such as tuna, salmon, mackerel and sardines are an excellent source of protein for dinner and will cut down your prep time drastically. Stuff canned tuna into avocados with other fresh veggies for a no-cook healthy meal. Or mix flaked salmon with ingredients to make salmon cakes that cook up in a snap. Mackerel and sardines can be used to make quick tartines and would go great with fresh lemon juice, olive oil and marinated veggies.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
