3) Use Frozen Veggies

Frozen veggies are a great way to make cooking a breeze. You can either buy them pre-packaged from the frozen foods section or chop up fresh veggies and freeze them yourself. When you need some vegetables for a quick dinner, they're a great way to cut down on prep time (no chopping/slicing necessary). They also cook up quicker than fresh veggies because they're not as firm. And bonus: No need to thaw them if using for hot recipes, such as roasts or soups.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
