5) Sub Lean Frozen Proteins for Fresh

Lean frozen proteins, such as pre-cooked or raw shrimp, pre-cooked hamburger patties or veggie burgers are great options for getting dinner on the table stat. While pre-cooked frozen foods aren't as good as fresh, they are perfect for those busy nights when you would have otherwise been tempted to get takeout. If you're getting frozen shrimp, go for wild vs. farmed varieties. They're safer and will taste a lot better. Also, do your homework on the best cooked proteins, to keep your health in check.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
