Ingredients (for 2-4 sandwiches):
1 can (15 oz) chickpeas, drained and rinsed
1 ripe avocado, mashed
1/4 cup red onion, finely chopped
2 tbsp fresh dill, chopped
1 tbsp Dijon mustard
1 tbsp lemon juice
Salt and pepper to taste
4 slices of your bread of choice (whole grain, sourdough, etc.)
Lettuce leaves or spinach (optional, for serving)
Instructions:
In a large bowl, mash the chickpeas with a fork or potato masher, leaving some chunks for texture.
Add the mashed avocado, chopped red onion, dill, Dijon mustard, lemon juice, salt, and pepper. Mix until well combined.
