Ingredients (for 2-3 servings):

  • 2 cups vegetable broth or water
  • 2 tbsp miso paste (white or red)
  • 1/2 cup tofu, cut into small cubes
  • 1/2 cup enoki mushrooms, trimmed
  • 1 tbsp dried wakame seaweed
  • 1 green onion, thinly sliced
  • 1 tbsp soy sauce (optional, for extra flavor)

Instructions:

  1. Soak the dried wakame seaweed in warm water for about 5 min. until it rehydrates and expands. Drain and set aside.
  2. In a medium saucepan, heat the vegetable broth or water over medium heat until it begins to simmer.
