Kaya Toast (Singapore)
A quintessential Singaporean breakfast, Kaya Toast is a delicious balance of sweet and savory. The crisp toast is spread with kaya, a rich coconut jam made from eggs, coconut milk, and sugar, then paired with soft-boiled eggs seasoned with soy sauce and pepper. Accompanied by a strong cup of coffee, it’s the perfect start to your morning with a unique flavor that blends creamy sweetness and comforting warmth.
Ingredients (for 2 servings):
- 4 slices white bread
- 4 tbsp kaya (coconut jam)
- 2 tbsp butter (room temperature)
- 2 large eggs
- Soy sauce (to taste)
- White pepper (to taste)
- Coffee (optional, for serving)
Instructions:
- Lightly toast the slices of white bread until golden and crisp. Spread 2 tbsp of kaya on each of 2 slices of toast. Top each with 1 tbsp of butter, spreading it evenly, then cover with the remaining slices of toast to make a sandwich. Cut the sandwiches in half, if desired.
- Bring a pot of water to a gentle simmer. Carefully lower the eggs into the water and cook for 5-6 min. for soft-boiled eggs. Remove the eggs from the pot and crack them into a small bowl.
- Season the soft-boiled eggs with soy sauce and a pinch of white pepper. Serve alongside the kaya toast, and pair with a hot cup of coffee for an authentic Singaporean breakfast experience.
