Tofu Stir Fry

Stir-fried tofu and vegetables is a quick and healthy dinner made with crispy tofu, vibrant vegetables, and a savory soy sauce-based stir-fry sauce. This simple dish is packed with plant-based protein and fresh vegetables, making it an easy and flavorful meal for busy weeknights. Feel free to use any vegetables that are already in your fridge! 

Ingredients (for 4 servings):

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 1 tbsp vegetable oil
  • 2 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Cooked rice or noodles for serving
  • Sesame seeds and green onions for garnish (optional)

Instructions:

  1. Heat vegetable oil in a large skillet over medium heat. Add the cubed tofu and cook for 5-7 min. while turning occasionally until all sides are golden brown and crispy. Remove the tofu from the pan and set aside.
  2. In the same pan, add the broccoli and bell peppers. Sauté for 4-5 min. until the vegetables are tender but still crisp.
  3. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, garlic, and ginger. If you prefer a thicker sauce, stir in the cornstarch slurry.
  4. Return the tofu to the pan with the vegetables, and pour the stir-fry sauce over the top. Cook for an additional 2-3 min. while stirring to coat the tofu and vegetables in the sauce. Serve hot over rice or noodles, garnished with sesame seeds and green onions if desired.
