This donut recipe lets you enjoy the warm flavors of fall any time of the year! Topped with a sweet maple glaze, they’re the perfect cozy treat to enjoy with your morning coffee or as a sweet treat at the end of the night.
Ingredients (for 12 donuts):
For the Donuts:
1 ¾ cups all-purpose flour
½ cup pumpkin puree
½ cup coconut sugar
¼ cup melted coconut oil
2 large eggs
½ cup almond milk
1 tsp vanilla extract
1 tsp baking powder
½ tsp baking soda
1 ½ tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg
¼ tsp salt
For the Glaze:
1 cup powdered sugar
2 tbsp maple syrup
1 tbsp almond milk
½ tsp vanilla extract
Instructions:
Preheat the oven to 350°F (175°C) and grease a donut pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
In a separate bowl, mix the pumpkin puree, coconut sugar, melted coconut oil, eggs, almond milk, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
Bake for 10-12 min. or until a toothpick inserted into the donuts comes out clean. Let the donuts cool in the pan for 5 min. then transfer to a wire rack.
While the donuts cool, whisk together the powdered sugar, maple syrup, almond milk, and vanilla extract to make the glaze.
Once the donuts are completely cool, dip the tops into the maple glaze and allow it to set.
