Cookie Dough Hummus

This cookie dough made from Chickpeas is a delicious, protein-packed, no-bake treat that’s perfect for entertaining! Made with blended chickpeas, almond butter, and natural sweeteners, this cookie dough is so good you can enjoy it by the spoonful or serve it with fruit, pretzels, or as a topping for yogurt or ice cream!

Ingredients (for 6 servings):

  • 1 can (15 oz) chickpeas, drained and rinsed
  • ¼ cup almond butter (or peanut butter)
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp oat flour (or any flour of choice)
  • ¼ tsp salt
  • ¼ cup dark chocolate chips
  • 1 tbsp almond milk (optional, for thinning)

Instructions:

  1. In a food processor or blender, combine the chickpeas, almond butter, maple syrup, vanilla extract, oat flour, and salt. Blend until smooth and creamy, scraping down the sides as needed.
  2. If the mixture is too thick, add 1 tbsp of almond milk at a time until you reach your desired consistency.
  3. Stir in the dark chocolate chips until evenly distributed.
  4. Transfer the chickpea cookie dough to a bowl and chill in the refrigerator for about 20 min. to let the flavors meld and firm up.
