These black bean brownies are rich, dense, and fudgy, offering all the indulgence of classic brownies with a healthy twist. Packed with protein and fiber from black beans, they’re naturally sweetened with coconut sugar and made extra chocolatey with cocoa powder. A perfect guilt-free treat that doesn’t compromise on flavor!
Ingredients (for 12 servings):
1 can (15 oz) black beans, drained and rinsed
3 tbsp cocoa powder
½ cup coconut sugar
¼ cup rolled oats
¼ cup coconut oil, melted
2 tsp vanilla extract
½ tsp baking powder
? tsp salt
½ cup dark chocolate chips (optional)
2 tbsp maple syrup (optional, for extra sweetness)
Instructions:
Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper.
In a food processor or blender, combine the black beans, cocoa powder, coconut sugar, oats, coconut oil, vanilla extract, baking powder, and salt. Blend until smooth and creamy, scraping down the sides as needed.
If using, stir in the chocolate chips and maple syrup for extra sweetness and texture.
Pour the batter into the prepared baking pan and spread it evenly with a spatula.
Bake for 20-25 min. or until the edges are firm and a toothpick inserted in the center comes out mostly clean.
Let the brownies cool completely in the pan before cutting them into squares.
