Pumpkin Risotto

Pumpkin risotto is a creamy and comforting dish made with short-grain rice, pumpkin purée, and savory broth. This quick and satisfying risotto is perfect for busy weeknights when you want something cozy and flavorful without spending too much time in the kitchen.

Ingredients (for 4 servings):

  • 1 cup Arborio rice
  • 3 cups vegetable or chicken broth
  • 1 cup pumpkin purée
  • ½ cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • ½ cup dry white wine (optional)
  • ½ tsp ground nutmeg
  • Salt and pepper to taste

Instructions:

  1. In a saucepan, heat the broth and keep it warm over low heat.
  2. In a large pan, melt the butter and olive oil over medium heat. Add the chopped onion and cook for 3-4 min. until softened.
  3. Stir in the Arborio rice and cook for 1-2 min. until the rice is lightly toasted.
  4. If using, pour in the white wine and cook until it is mostly absorbed, about 1-2 min.
  5. Add 1 cup of the warm broth to the rice and stir constantly until absorbed. Continue adding broth, ½ cup at a time, stirring until the liquid is absorbed before adding more, for about 15 min.
  6. Stir in the pumpkin purée, nutmeg, and Parmesan cheese. Cook for another 2-3 min. until everything is creamy and well combined. Season with salt and pepper to taste. If desired, drizzle with coconut cream and seeds of your choice for a decorative garnish!
