Pumpkin Hummus Wraps
Pumpkin hummus wraps are a quick, nutritious meal where creamy pumpkin hummus is spread on wraps and layered with fresh veggies. The combination of chickpeas, pumpkin purée, tahini, and spices gives the hummus a unique flavor. For a warm variation, try roasting pumpkin cubes to add to the wraps if you have extra time!
Ingredients (for 4 servings):
- 1 can (15 oz) chickpeas, drained and rinsed
- ½ cup pumpkin purée
- 2 tbsp tahini
- 1 clove garlic
- 1 tbsp lemon juice
- 1 tsp ground cumin
- ½ tsp smoked paprika
- Salt and pepper to taste
- 4 large wraps or tortillas
- Fresh veggies for filling: spinach, cucumber slices, shredded carrots, bell pepper strips
- Optional: Roasted pumpkin cubes (if time allows)
Instructions:
- In a food processor, blend the chickpeas, pumpkin purée, tahini, garlic, lemon juice, cumin, smoked paprika, salt, and pepper until smooth. Add a little water if needed to reach your desired consistency.
- Spread a generous amount of the pumpkin hummus onto each wrap.
- Layer with fresh veggies like spinach, cucumber, shredded carrots, and bell pepper strips.
- (Optional) If you have extra time, roast cubed pumpkin at 400°F (200°C) for 20-25 min. and add it to the wraps for a warm option.
- Roll up the wraps tightly, slice in half, and serve.
