Pumpkin and Sage Butter Gnocchi

This pumpkin gnocchi is an elegant yet easy dish where store-bought gnocchi is tossed in a rich, homemade brown butter sauce infused with pumpkin and fresh sage. This combination creates a savory, nutty, and aromatic meal that's perfect for autumn evenings.

Ingredients (for 4 servings):

  • 16 oz store-bought gnocchi
  • ½ cup pumpkin purée
  • ¼ cup unsalted butter
  • 6-8 fresh sage leaves
  • 1 clove garlic, minced
  • ¼ tsp ground nutmeg
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions:

  1. Cook the gnocchi according to package instructions, then drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the fresh sage leaves and cook for 2-3 min., until the butter starts to brown and becomes fragrant. Remove the sage leaves and set aside.
  3. Add the minced garlic and pumpkin purée to the browned butter, stirring well to combine. Cook for 2-3 min., then add nutmeg and season with salt and pepper to taste.
  4. Toss the cooked gnocchi in the pumpkin sage butter sauce until well coated.
  5. Serve hot, topped with the crispy sage leaves and a sprinkle of grated Parmesan.
