Ingredients (for 4 servings):
1 ½ cups all-purpose flour
1 tsp baking powder
1 tsp ground cinnamon
¼ tsp nutmeg
¼ tsp salt
2 tbsp sugar
1 cup shredded carrots
½ cup chopped walnuts
¼ cup coconut flakes
1 cup milk (or dairy-free alternative)
2 eggs
3 tbsp melted butter (or coconut oil)
1 tsp vanilla extract
Instructions:
Preheat your waffle iron according to the manufacturer's instructions.
In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and sugar.
In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until combined. Fold in the shredded carrots, walnuts, and coconut flakes.
