Carrot Waffles

These carrot waffles offer a unique twist on a classic breakfast, blending shredded carrots into a lightly spiced waffle batter. The addition of cinnamon, crunchy walnuts, and coconut flakes makes for a deliciously savory and sweet start to the day.

Ingredients (for 4 servings):

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 2 tbsp sugar
  • 1 cup shredded carrots
  • ½ cup chopped walnuts
  • ¼ cup coconut flakes
  • 1 cup milk (or dairy-free alternative)
  • 2 eggs
  • 3 tbsp melted butter (or coconut oil)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and sugar.
  3. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
