Pumpkin Strudel

What's even better than pumpkin pie? This spiced strudel is a delightful dessert that encapsulates the flavors of fall, featuring tender cubes of cooked pumpkin wrapped in crispy phyllo dough and infused with warm spices. Baked to a golden perfection, this strudel is a delightful treat that's perfect for any autumn gathering. Serve it warm with a scoop of vanilla ice cream for an irresistible dessert!

Ingredients (for 6 servings):

  • 2 cups cooked pumpkin, cubed
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ginger
  • 2 tbsp brown sugar
  • 1 package (8 oz) phyllo dough, thawed
  • ½ cup unsalted butter, melted
  • ½ cup walnuts or pecans, chopped (optional)
  • Powdered sugar for dusting
  • Vanilla ice cream (for serving)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked pumpkin cubes, cinnamon, nutmeg, ginger, brown sugar, and chopped nuts (if using). Mix well until the pumpkin is evenly coated with the spices.
  3. Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush with butter again. Repeat this process for 4-5 sheets, layering and buttering each one.
  4. Spoon the pumpkin filling along one edge of the phyllo dough, leaving a border. Carefully roll the phyllo over the filling to create a log shape, tucking in the sides as you go to seal in the filling.
  5. Place the rolled strudel seam-side down on a baking sheet lined with parchment paper. Brush the top with more melted butter.
  6. Bake in the preheated oven for 25-30 min. or until golden and crispy.
  7. Remove from the oven and let cool slightly. Dust with powdered sugar before slicing.
  8. Serve warm with a scoop of vanilla ice cream.
