Pumpkin Pizza
This savory pumpkin pizza combines roasted pumpkin cubes, creamy feta cheese, and fresh arugula over a luscious white sauce base. The crispy crust, tender pumpkin, and peppery arugula create a mouthwatering balance of flavors and textures, perfect for a comforting meal.
Ingredients (for 4 servings):
- 1 pizza crust (store-bought or homemade)
- 2 cups pumpkin, peeled and cubed
- 1 cup feta cheese, crumbled
- 2 cups fresh arugula
- ½ cup white sauce (store-bought or homemade)
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: Fresh herbs for garnish (like thyme)
Instructions:
- Preheat the oven according to the pizza crust instructions (around 450°F/230°C).
- Heat olive oil in a skillet over medium heat. Add cubed pumpkin, season with salt and pepper, and sauté for 8-10 min. until tender but firm.
- Roll out the pizza crust and transfer it to a baking sheet or pizza stone.
- Spread the white sauce evenly over the crust, leaving a small border.
- Distribute the sautéed pumpkin evenly, and sprinkle crumbled feta on top.
- Bake for 12-15 min. or until the crust is golden and the cheese is slightly melted.
- Remove from the oven, let cool slightly, and top with fresh arugula and herbs.
