Pumpkin Pizza

This savory pumpkin pizza combines roasted pumpkin cubes, creamy feta cheese, and fresh arugula over a luscious white sauce base. The crispy crust, tender pumpkin, and peppery arugula create a mouthwatering balance of flavors and textures, perfect for a comforting meal.

Ingredients (for 4 servings):

  • 1 pizza crust (store-bought or homemade)
  • 2 cups pumpkin, peeled and cubed
  • 1 cup feta cheese, crumbled
  • 2 cups fresh arugula
  • ½ cup white sauce (store-bought or homemade)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: Fresh herbs for garnish (like thyme)

Instructions:

  1. Preheat the oven according to the pizza crust instructions (around 450°F/230°C).
  2. Heat olive oil in a skillet over medium heat. Add cubed pumpkin, season with salt and pepper, and sauté for 8-10 min. until tender but firm.
  3. Roll out the pizza crust and transfer it to a baking sheet or pizza stone.
  4. Spread the white sauce evenly over the crust, leaving a small border.
  5. Distribute the sautéed pumpkin evenly, and sprinkle crumbled feta on top.
  6. Bake for 12-15 min. or until the crust is golden and the cheese is slightly melted.
