Roasted Garlic Alfredo

This homemade roasted garlic Alfredo sauce is a creamy, buttery delight with the deep, savory flavor of roasted garlic. It's perfect for drizzling over pasta or as a decadent sauce for vegetables or proteins. This Alfredo sauce adds a luxurious touch to any meal. Better yet, it’s ultra-simple to make!

Ingredients (for 4 servings):

  • 1 bulb garlic, roasted
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp nutmeg (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, and wrap in foil. Roast for 35-40 min. until soft and golden. Once cool, squeeze the roasted garlic cloves from their skins and mash them into a paste.
  2. In a medium saucepan, melt the butter over medium heat. Add the roasted garlic paste and cook for 1-2 min. to release its aroma.
  3. Pour in the heavy cream, stirring constantly. Bring to a gentle simmer, but do not let it boil. Cook for about 5 min. until slightly thickened.
  4. Slowly stir in the grated Parmesan cheese, allowing it to melt into the sauce. Continue stirring until the sauce becomes smooth and creamy.
  5. Add salt, pepper, and a pinch of nutmeg for extra depth of flavor. Taste and adjust seasoning if needed.
  6. Toss the sauce with your favorite pasta or pour it over roasted vegetables. Garnish with fresh parsley for a pop of color.
