Chicken Tacos

Crockpot chicken tacos are a simple and flavorful way to prepare tender, juicy shredded chicken. They are a great go-to recipe that’s ready to pile into tortillas and top with all your favorite taco fixings. Perfect for feeding a crowd or meal prepping for the week!

Ingredients (serves 6):

  • 2 lbs. boneless, skinless chicken breasts
  • 1 packet taco seasoning (or homemade seasoning)
  • 1 cup chicken broth
  • 1 can (10 oz.) diced tomatoes with green chilies
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 12 small tortillas (corn or flour)
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole, salsa, etc.

Instructions:

  1. Place the chicken breasts in the crockpot and season both sides with the taco seasoning. Add diced tomatoes with green chilies, onion, garlic, and chicken broth to the crockpot.
  2. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  3. Once the chicken is done, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and stir to combine it with the juices. Add lime juice and adjust seasoning with salt and pepper if needed.
  4. Warm the tortillas, either in a skillet or microwave, and fill each with a generous portion of shredded chicken.
  5. Add your favorite taco toppings, like shredded lettuce, diced tomatoes, cheese, sour cream, guacamole, and salsa.
  6. Serve the tacos warm, and enjoy this flavorful, easy meal!
