Beef Stew
This beef stew is a cozy, comforting dish filled with tender chunks of beef, potatoes, carrots, and onions, all simmered in a rich, flavorful broth. Perfect for chilly days, this stew will fill your home with warmth and delicious aromas while the slow cooker does all the work. Just set it and forget it, and enjoy a delicious, tender stew by the end of the day!
Ingredients (serves 6):
- 2 lbs. beef chuck roast, cut into 1-inch cubes
- 4 cups beef broth
- 1 lb. potatoes, peeled and cubed
- 3 large carrots, peeled and sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp flour (for thickening)
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large skillet, heat olive oil over medium-high heat. Season the beef chunks with salt and pepper. Sear the beef in batches until browned on all sides, about 4-5 min. per batch. Transfer the browned beef to the slow cooker.
- Add the potatoes, carrots, onions, and garlic to the slow cooker with the beef.
- In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and flour until smooth. Pour the mixture over the beef and vegetables in the slow cooker.
- Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
- Before serving, taste the stew and adjust the seasoning with salt and pepper if needed.
- Ladle the stew into bowls and garnish with fresh parsley for a pop of color. Serve warm with crusty bread or over mashed potatoes for an extra comforting meal.
