Honey Garlic Chicken
No chicken dinner is complete without tender, juicy chicken thighs slow-cooked in a rich, sweet, and garlicky sauce. Serve it over rice for an easy, comforting meal. This honey garlic chicken is irresistibly sweet, savory, and perfect for a no-fuss weeknight dinner.
Ingredients (serves 4):
- 1 ½ lbs. chicken thighs, skinless and boneless
- 1/3 cup honey
- 1/3 cup soy sauce (low-sodium)
- 4 cloves garlic, minced
- 1 tbsp. rice vinegar or apple cider vinegar
- 1 tsp. ginger, minced
- 1 tbsp. cornstarch
- 1 tbsp. water
- Green onions and sesame seeds, for garnish
Instructions:
- In a bowl, whisk together honey, soy sauce, minced garlic, vinegar, and ginger.
- Place chicken thighs in the slow cooker and pour the honey garlic sauce over them, ensuring they’re fully coated.
- Cover and cook on low for 5-6 hours, or on high for 2-3 hours, until the chicken is tender.
- In a small bowl, mix cornstarch with water. Pour this mixture into the slow cooker and stir gently. Cook for an additional 15 min. on high until the sauce thickens.
- Garnish with sliced green onions and sesame seeds. Serve hot over rice, spooning extra sauce over the chicken.
