Ingredients (serves 4):
1 ½ lbs. chicken thighs, skinless and boneless
1/3 cup honey
1/3 cup soy sauce (low-sodium)
4 cloves garlic, minced
1 tbsp. rice vinegar or apple cider vinegar
1 tsp. ginger, minced
1 tbsp. cornstarch
1 tbsp. water
Green onions and sesame seeds, for garnish
Instructions:
In a bowl, whisk together honey, soy sauce, minced garlic, vinegar, and ginger.
Place chicken thighs in the slow cooker and pour the honey garlic sauce over them, ensuring they’re fully coated.
Cover and cook on low for 5-6 hours, or on high for 2-3 hours, until the chicken is tender.
In a small bowl, mix cornstarch with water. Pour this mixture into the slow cooker and stir gently. Cook for an additional 15 min. on high until the sauce thickens.
Garnish with sliced green onions and sesame seeds. Serve hot over rice, spooning extra sauce over the chicken.
