Ingredients (serves 4):
1 lb. sea scallops, patted dry
Salt and pepper, to taste
4 tbsp. unsalted butter
2 cloves garlic, minced
1 tbsp. fresh lemon juice
1 tbsp. chopped fresh parsley, for garnish
Optional: lemon wedges, for serving
Instructions:
Season the scallops lightly with salt and pepper on both sides. Make sure they are dry to achieve a good sear.
Heat a large skillet over medium heat. Add the butter and let it melt, swirling the pan as it turns golden brown and takes on a nutty aroma, about 2-3 min.
Increase heat to medium-high. Carefully place the scallops in the skillet, leaving space between each. Sear undisturbed for 2-3 min., until a golden crust forms on the bottom. Flip the scallops and cook for another 2-3 min., until both sides are golden and opaque in the center.
In the last minute of cooking, add the minced garlic and lemon juice, swirling the pan to combine the flavors. Baste the scallops with the brown butter sauce as they finish cooking.
Remove from heat and sprinkle with fresh parsley. Serve immediately, with additional lemon wedges if desired.
