Easy Thanksgiving Salads Good Enough to Outshine Other Sides

Crunchy Brussels Sprout Salad

Not only is it nutrient-packed, but this Brussels sprout salad brings a delightful mix of textures and flavors to your table. It's easy to make and pairs well with roasted meats, cozy pasta dishes, or as a light standalone meal for a refreshingly unique twist on salad.

Ingredients (for 4 servings):

For the Salad:

  • 1 lb Brussels sprouts, trimmed and thinly shredded
  • ½ cup dried cranberries
  • ¼ cup pine nuts, toasted
  • ½ cup crumbled cheese (feta, goat cheese, or Parmesan)
  • Salt and pepper, to taste

For the Dressing:

  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, Dijon mustard, honey, and a pinch of salt and pepper. Adjust to taste if necessary, and set aside.
  2. Place the shredded Brussels sprouts in a large bowl. Add the dried cranberries, toasted pine nuts, and crumbled cheese of your choice.
  3. Pour the dressing over the salad and toss well to coat everything evenly. Season with additional salt and pepper to taste.
  4. Transfer to a serving bowl or platter, and if desired, sprinkle with extra pine nuts or cheese crumbles as a garnish.

These baked Cheesy Eggplant Hedgehogs are totally adorable, tasty and really easy to make! 

 

Ingredients

  • 3 large eggplants
  • 1 cup olive oil
  • 1/4 cup chopped basil
  • 1 garlic clove, minced
  • Salt
  • Pepper
  • 4 cup shredded cheese


Method

  1. Mix the olive oil, chopped basil, garlic, salt and pepper in a bowl.
  2. Carefully slice the eggplant on it's side in a cross-hatch pattern, without cutting all the way through.
  3. Lay the eggplants inside an oven-safe baking tray.
  4. Pour the oil mixture over the eggplants, taking care to pour between the slices.
  5. Stuff the gaps in the eggplant with shredded cheese.
  6. Cook in the oven at 355°F for 45 minutes, until the flesh is cooked and the cheese totally melted.
  7. Serve and enjoy!
