Waldorf Salad

Waldorf salad is a classic, refreshing dish that brings a delightful crunch and contrast to any meal. Ingredients (for 4 servings):

  • 2 large apples, diced (use a mix of red and green for color)
  • 1 cup red or green grapes, halved
  • 1 cup celery, thinly sliced
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • Salt and pepper, to taste
  • Fresh spinach or mixed greens for serving

Instructions:

  1. In a small bowl, whisk together mayonnaise (or Greek yogurt), lemon juice, honey, salt, and pepper until smooth and well combined.
  2. In a large mixing bowl, add diced apples, halved grapes, sliced celery, and walnuts. Pour the dressing over the ingredients and toss gently to coat everything evenly.
  3. Arrange a bed of spinach or mixed greens on a serving platter or individual plates. Spoon the Waldorf Salad over the greens, spreading it evenly.
  4. Add an extra sprinkle of walnuts or a dash of fresh pepper for garnish if desired.
