Ingredients (for 6-8 servings):
1 lb fresh green beans, trimmed and cut into 1-inch pieces (or 4 cups frozen green beans, thawed)
1 can (10.5 oz) condensed cream of mushroom soup
½ cup milk
1 cup shredded sharp cheddar cheese (optional)
Salt and pepper, to taste
1 cup crispy fried onions (plus extra for topping)
Instructions:
Preheat your oven to 350°F (175°C).
If using fresh green beans, blanch them by boiling in salted water for 3–5 min. until tender-crisp, then drain and set aside.
In a large bowl, combine cream of mushroom soup, milk, shredded cheddar cheese (if using), and season with salt and pepper. Add the green beans and 1 cup of crispy fried onions, stirring to coat.
Transfer the mixture to a baking dish and spread evenly. Bake in the preheated oven for 25 min. until bubbly.
Sprinkle extra crispy fried onions on top and bake an additional 5 min. until the onions are golden and crispy.
