Cheesy Broccoli Casserole

Broccoli cheddar casserole is the ultimate comfort food that brings together tender broccoli, a rich and creamy cheddar cheese sauce, and a crunchy breadcrumb topping. This dish is an easy way to make broccoli irresistible and pairs wonderfully with roasted chicken or as a centerpiece for a vegetarian meal.

Ingredients (for 6-8 servings):

  • 1½ lbs fresh broccoli, cut into florets
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1½ cups milk (whole or 2%)
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded, divided
  • ½ cup Parmesan cheese, grated
  • ½ tsp garlic powder
  • ½ tsp paprika (optional)
  • Salt and black pepper, to taste
  • 1 cup breadcrumbs (panko recommended)
  • 2 tbsp olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the broccoli florets and blanch for 2 min. until bright green and slightly tender. Drain and rinse under cold water to stop the cooking process. Pat dry and set aside.
  3. In a medium saucepan, melt butter over medium heat. Whisk in the flour and cook for 1 min. to form a roux.
  4. Slowly whisk in the milk and cream, ensuring no lumps form. Cook, stirring constantly, until the mixture thickens, about 3-4 min.
  5. Reduce the heat to low and stir in 1½ cups of cheddar cheese, Parmesan, garlic powder, paprika, salt, and black pepper. Stir until the cheese is fully melted and the sauce is smooth.
  6. Place the blanched broccoli in a greased 9x13-inch baking dish. Pour the cheese sauce evenly over the broccoli, ensuring all pieces are coated.
  7. In a small bowl, mix the breadcrumbs with olive oil and a pinch of salt. Sprinkle the mixture over the casserole, then top with the remaining ½ cup of shredded cheddar.
  8. Bake for 20-25 min., or until the topping is golden brown and the cheese is bubbly.
  9. Allow the casserole to rest for 5 min. before serving.
