These delicious Christmas trees are a festive twist on the classic deviled eggs, perfect for holiday gatherings. With a touch of red and yellow bell peppers to form the tree decorations, these cute and colorful appetizers are sure to be a hit at any celebration! For extra festive flair, you can also use small star-shaped cutters to make the bell pepper ornaments.
Ingredients (for 12 trees):
- 6 large eggs, hard-boiled
- 1 ripe avocado
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp white vinegar
- Salt and pepper, to taste
- 1/4 tsp paprika (for garnish)
- 1/4 red bell pepper, finely diced
- 1/4 yellow bell pepper, finely diced
Instructions:
- Peel the hard-boiled eggs and cut them in half lengthwise. Remove the yolks and place them in a mixing bowl. Set the egg whites aside on a platter.
- Mash the egg yolks with the avocado, mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth and creamy. Adjust seasoning to taste if needed.
- Spoon the yolk mixture back into the hollowed egg whites, or use a piping bag for a more decorative look. Make a small mound of the yolk mixture in the center of each egg white.
- Arrange the deviled eggs in the shape of a tree on the platter. You can line them up in a triangular shape or layer them for a more dimensional look.
- Decorate each egg with small pieces of red and yellow bell peppers to resemble ornaments on the tree.
- Sprinkle a tiny pinch of paprika on top for added color and flavor.
- Serve immediately, or refrigerate until ready to serve.
