Smoked salmon and cucumber Christmas trees are delightful holiday appetizers combining the fresh crunch of cucumber ribbons with the rich, savory flavor of smoked salmon. These festive bites are shaped into Christmas trees and held together with a toothpick, making them as fun to assemble as they are to eat. For a splash of color, sprinkle pomegranate arils or finely diced red bell peppers around the platter as edible "ornaments."
Ingredients (for about 12 servings):
6 oz smoked salmon, thinly sliced
2 large cucumbers
2 tbsp cream cheese, softened (optional, for added creaminess)
Fresh dill sprigs, for garnish

Instructions:
Using a vegetable peeler or mandoline, slice the cucumbers lengthwise into thin ribbons. Pat dry with paper towels to remove excess moisture.
If using cream cheese, spread a small amount onto one end of each cucumber ribbon.
Fold the ribbon back and forth in a zigzag pattern to create a tree shape.
Insert a toothpick through the center of the folds to hold the "tree" in place.
Tear small pieces of smoked salmon and layer them between some of the folds for added flavor and texture.
Top each tree with a small sprig of dill to mimic the look of a star or tree topper.
Arrange the trees on a festive serving platter and refrigerate for at least 15 min. before serving to keep them fresh.
