Date and Nut Snowballs
These date and nut snowballs are a no-bake holiday treat that’s the perfect balance of sweet and nutty, with a satisfying chewiness that makes them irresistible. Made with naturally sweet dates, crunchy almonds, and a touch of vanilla, these bite-sized delights are rolled in shredded coconut for a festive, snowy look. They’re quick to prepare, require minimal ingredients, and make a perfect addition to any holiday dessert platter.
Ingredients (for about 20 snowballs):
- 1 ½ cups pitted Medjool dates
- 1 cup raw almonds
- ½ cup shredded unsweetened coconut, plus extra for rolling
- 1 tsp vanilla extract
- 1 tbsp coconut oil (optional, for extra moisture)
- Pinch of salt
Instructions:
- In a food processor, combine the dates and almonds. Pulse until the mixture is crumbly but holds together when pressed between your fingers.
- Add the shredded coconut, vanilla extract, coconut oil (if using), and salt. Blend again until the mixture is well combined and slightly sticky.
- Using your hands, roll small portions of the mixture into 1-inch balls.
- Spread extra shredded coconut on a plate. Roll each ball in the coconut until fully coated, pressing gently to adhere.
- Place the finished snowballs on a parchment-lined tray and refrigerate for at least 30 min. to firm up. Store them in an airtight container in the fridge for up to a week.
