Date and Nut Snowballs

These date and nut snowballs are a no-bake holiday treat that’s the perfect balance of sweet and nutty, with a satisfying chewiness that makes them irresistible. Made with naturally sweet dates, crunchy almonds, and a touch of vanilla, these bite-sized delights are rolled in shredded coconut for a festive, snowy look. They’re quick to prepare, require minimal ingredients, and make a perfect addition to any holiday dessert platter.

Ingredients (for about 20 snowballs):

  • 1 ½ cups pitted Medjool dates
  • 1 cup raw almonds
  • ½ cup shredded unsweetened coconut, plus extra for rolling
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil (optional, for extra moisture)
  • Pinch of salt

Instructions:

  1. In a food processor, combine the dates and almonds. Pulse until the mixture is crumbly but holds together when pressed between your fingers.
  2. Add the shredded coconut, vanilla extract, coconut oil (if using), and salt. Blend again until the mixture is well combined and slightly sticky.
  3. Using your hands, roll small portions of the mixture into 1-inch balls.
  4. Spread extra shredded coconut on a plate. Roll each ball in the coconut until fully coated, pressing gently to adhere.
  5. Place the finished snowballs on a parchment-lined tray and refrigerate for at least 30 min. to firm up. Store them in an airtight container in the fridge for up to a week.
