Ingredients (for about 12 cookies):
1 ½ cups rolled oats
¾ cup almond flour
1 tsp baking powder
1 ½ tsp cinnamon
½ tsp nutmeg
¼ tsp ground ginger
¼ tsp salt
½ cup unsweetened applesauce
2 tbsp maple syrup
2 tbsp coconut oil, melted
1 tsp vanilla extract
1 small apple, peeled, cored, and diced
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the oats, almond flour, baking powder, cinnamon, nutmeg, ginger, and salt. Stir to blend.
In a separate bowl, whisk together the applesauce, maple syrup, melted coconut oil, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and mix until fully incorporated. Fold in the diced apple.
Scoop the dough into 2-tablespoon portions and shape into rounds. Place them on the prepared baking sheet, leaving space between each cookie, and flatten slightly with your hand or a spoon.
Bake for 12-15 min., or until the cookies are set and slightly golden around the edges. Let them cool on the baking sheet for 5 min. before transferring them to a wire rack to cool completely.
