Layered Lemon Pie

Bright and refreshing, this lemon pie features a tangy lemon custard layer topped with light, fluffy whipped cream. Made with a sugar-free almond flour crust and garnished with lemon zest or dried lemon slices, it’s a naturally sweetened dessert perfect for any occasion.

Ingredients (for 8 servings):

For the Crust:

  • 1 ½ cups almond flour
  • 3 tbsp coconut oil or unsalted butter, melted
  • 1 large egg
  • ½ tsp vanilla extract
  • ¼ tsp sea salt

For the Filling:

  • 1 cup fresh lemon juice (about 4-5 lemons)
  • Zest of 2 lemons
  • ½ cup honey or maple syrup
  • 4 large egg yolks
  • ? cup cornstarch
  • 1 cup unsweetened almond milk or regular milk

For the Topping:

  • 1 cup heavy cream (or coconut cream for a dairy-free option)
  • 1 tsp pure vanilla extract

For the Garnish:

  • Fresh lemon zest or lemon slices

Instructions:

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine almond flour, melted coconut oil, egg, vanilla extract, and sea salt. Mix until a dough forms.
  2. Press the dough evenly into a 9" pie pan, ensuring the base and sides are covered. Prick the bottom with a fork to prevent bubbling. Bake for 10-12 min, or until golden brown. Let the crust cool completely.
  3. In a medium saucepan, whisk together lemon juice, lemon zest, honey (or maple syrup), egg yolks, cornstarch, and almond milk. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble, about 6-8 min.
  4. Remove from heat and let the custard cool slightly. Pour it into the cooled crust, spreading evenly. Cover with plastic wrap directly on the surface to prevent a skin from forming. Chill in the refrigerator for 2-3 hours, or until fully set.
  5. In a chilled mixing bowl, combine heavy cream, powdered sugar substitute, and vanilla extract. Whip using a hand mixer or stand mixer until stiff peaks form.
  6. Once the lemon layer is set, spread the whipped topping evenly over the custard. Use a spatula or piping bag for a decorative finish.
  7. Sprinkle fresh lemon zest over the pie or add dried lemon slices for an elegant garnish. Chill for another 30 min. Slice and serve cold.
