Miracle Cabbage Stir-Fry

Quick, healthy, and surprisingly satisfying, this stir-fry turned humble cabbage into a star ingredient. Its low-cost appeal and adaptability for different diets fueled its online success. Add protein by stirring in cooked shrimp, tofu, or chicken before servings or add a handful of cashews for an extra crunch!

Ingredients (for 4 servings):

  • 2 tbsp sesame oil (or vegetable oil)
  • 1 small onion, thinly sliced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 medium head of cabbage, thinly sliced
  • 1 medium carrot, julienned or grated
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp honey or maple syrup (optional)
  • 1 tsp toasted sesame seeds (for garnish)
  • 1 green onion, sliced (for garnish)
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Slice the cabbage and carrots into thin strips. Have all ingredients measured and ready for quick cooking.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add the onion, garlic, and ginger to the skillet. Stir-fry for 1-2 min. until fragrant.
  4. Increase the heat to high. Add the cabbage and carrot to the skillet, stirring frequently. Cook for 5-7 min. until the vegetables are tender but still crisp.
  5. Stir in soy sauce, rice vinegar, and honey or maple syrup (if using). Toss well to coat the vegetables evenly.
  6. Remove from heat and sprinkle with sesame seeds, green onion, and red pepper flakes, if desired.
  7. Enjoy as a side dish or pair with steamed rice, noodles, or your favorite protein for a complete meal.
